Simple Egg Curry


Ingredients :
Boiled Eggs - 3
Onions - 2
Green Chillies - 3
Tomato - 2
Ginger garlic paste - 2 tbl spoons
Red chilli powder - 2 tbl spoons
Coriander/dhania powder - 2 tbl spoons
Turmeric powder
Salt - 1 to 1 1/2 tbl spoon
Oil - 4 tbl spoons
Coriander leaves
Procedure :
1. Hard boil eggs, remove the shell and keep aside . Take pan and heat oil - 1 tbl spoon and keep turmeric powder in that and fry eggs and take it out.
2. Now add still more oil - 3tbl spoons and heat oil and keep chopped onions, green chillies,ginger garlic paste and fry for few minutes .
3. Then add chopped tomatoes and fry for few minutes . Then add eggs along with red chilli powder, corainder powder and salt . Add little water and Cook the curry until the oil separates .

4. Then garnish with coriander leaves and serve.

Fish Gravy


Ingredients :

Fish Pieces - 4

Tamarind - 1/2 lemon size
(Soak in water)

Cumin Seeds - 1 tbl spoon

Lavang - 4

Elachi - 3

Ginger - small piece

Garlic - 1/2

Small Onions - 2

Green Chillies - 4

Red Chilli Powder - 1 1/2 tbl spoon

Turmeric Powder

Salt

Corainder leaves

Process :

1. First jeera,lavang,elachi,ginger,garlic grind it.Then add onion pieces in that and grind it.

2. Take pan add oil and heat it. Now add green chillies and grinded onion paste and fry it well until it turns brown.

3. Now add redchilli powder,turmeric powder,salt and fry for sometime.

4. Now add fish pieces and fry it.Now add tamarind paste and water and boil the curry until the fish boils.

5 . Then Garnish with corainder leaves and serve with hot rice.

Palak Dal (Pappu Palakura)(Spinach Dal)


Ingredients :

Palak - 1 bunch

(pluck the leaves and wash them and cut it )

Toor dal ( kandipappu ) - 1 cup

Onions (small) - 2(chopped)

Green chillies - 10

Turmeric Powder

Oil - 1 tbl spoon

Salt - to taste

Mustard seeds - 1 tbl spoon

Jeera - 1 tbl spoon

Garlic cloves - 2

Red chillies - 1 or 2

Curry leaves

Tamarind Paste- 4 to 5 tbl spoons

Process :

1. Wash and pressure cook dal,palak,tamarind,chopped onions,green chillies,turmeric together with 3 cups of water till 3 whistles .

2. When the pressure is released,remove the lid add salt .

3. Heat oil in a Pan add crushed garlic cloves,mustard seeds,jeera,red chillies,curry leaves and fry them to turn brown .

4. Now add dal to this and cook in low heat with lid covered for 5 minutes.

5. Serve hot with rice,ghee and mango pickle.

Prawn Fry


Ingredients :

Prawns - 1/4 kg

Onions - 3

Green chillies -5

Jeera - 1 tbl spoon

Garam Masala - 1 tbl spoon

Ginger Garlic paste - 1 to 1 1/2 tbl spoon

Red chilli powder - 1 tbl spoon

Turmeric Powder

Salt - to taste

Coriander leaves - 1/2 bunch

Process :

1 . First Grind jeera and add onion pieces and grinde it.

2. Take pan and heat oil in that and add onion paste,green chillies and fry it well. Then add ginger garlic paste, garam masala and fry it .

3. Then add Prawns in that and fry it for sometime. Now add red chillipowder, turmeric powder, salt and fry it.

4. Now close with cap (if you close the cap of that pan prawn will boil soon) and fry it until the prawn boiled.

5. Now garnish with coriander leaves. And serve with hot rice.

Cabbage Chutney


Ingredients :

Cabbage - 1/2 (finely chopped)

Green Chillies - 10

Oil - 5 tbl spoons

Cumin Seeds - 1 tbl spoon

Mustard Seeds - 1 tbl spoon

Red chillies - 3

Urad dal - 1 tbl spoon

Chana dal - 1 tbl spoon

Garlic Cloves - 3

Salt - 1 or 1 1/2 tbl spoon

Curry Leaves

Tamarind - 2 inch

Onion - 1( finely chopped )

Process :

1. Take Pan and add 2 tbl spoons oil and heat it . Keep cabbage , green chillies in that and fry until it comes to brown colour.

2. Now make the cabbage cool.

3. Grind jeera , garlic cloves . And add in that fried Cabbage , green chillies and salt , tamarind and grind it. ( If u need water u can add less than 1/2 glass)

4. Now heat the pan and add oil 3 tbl spoons and keep mustard seeds , urad dal , chana dal , red chillies , curyy leaves and fry it. Now add grinded cabbage mix in that and fry it untill it becomes thick.

5. Now garnish onion pieces and serve with Hot Rice and Ghee.

Potato Fry


Ingredients :

Potato - 2 ( Small sliced pieces )

Onions - 2

Red Chillies - 6

Jeera - 1 tbl spoon

Garlic Cloves - 2

Red chilli powder - 1/2 to 1 tbl spoon

Turmeric Powder

Salt - to taste

Curry Leaves

Oil - 5 to 7 tbl spoons

Mustard Seeds - 1 tbl spoon

Process :

1 . First Grind jeera , garlic , 5 red chillies and add onion pieces and grind it.

2. Take pan and heat oil in that and add mustard seeds , curry leaves , 1 red chilli fry it . Now add onion paste and fry it well . Then add potato and fry it .

3. Now add red chilli powder , turmeric powder , salt and fry it .

4. Now close with cap ( if you close the cap of that pan potato will boil soon ) and fry it until the potato boiled .

5. And serve with hot rice .

Dal Ridge Gourd


Ingredients :

Toor dal ( kandipappu ) - 1 cup

Ridge gourd (Beerakaya) - 1

Meal Maker - 10 to 15

Green Chillies - 12

Jeera - 1 tbl spoon

Tumeric Powder

Salt - to taste

Oil - 4 tbl spoon

Mustard Seeds - 1 tbl spoon

Red Chillies - 3

Curry leaves

Garlic Cloves - 3

Process :

1. Take top of
ridge gourd and cut into pieces. Wash and pressure cook dal, ridge gourd pieces,jeera together with 2 cups of water till 4 whistles .

2. When the pressure is released,remove the lid,add salt,turmeric powder.

3. Heat Oil 2 tbl spoons in a Pan and fry meal maker and fry them to turn brown .

4. Heat oil in a Pan add crushed garlic cloves,mustard seeds,red chillies, curry leaves and fry them to turn brown.

5. Now add dal to this and fried meal maker (atleast 15mins before meal maker if you add in dal,meal maker will be good). And cook in low heat with lid covered for 5 minutes.

6. Serve hot with rice,ghee and mango pickle.
