Rice Upma


Ingredients :

Rice - 1 cup

(Grind rice.You can grind rice in mixie or coffee grinder.)

Moong dal - 3 tbl spoons (Soak in water)

Onion (cut into slits) - 1

Green Chillies - 6

Curry leaves

Oil - 2 tbl spoons

Mustard Seeds - 1 tbl spoon

Urad dal - 1 tbl spoon


Chana Dal - 1 tbl spoon

Salt - to taste

Water - 1 1/2 cup

Process :

1. Heat 1 tbl spoon oil in a pan and add chana dal, urad dal, mustard seeds, curry leaves and fry it .

2.Add onion, green chillies. Fry them till onions turn brown .

3.Now add moong dal and fry it.Then add water and salt and bring it to boil (you can test if the salt is sufficient or not by tasting the water . If the water is salty to taste , it indicates that salt would be sufficient after adding grinded rice , otherwise add little more salt to water )

4. When the water comes to boil , turn the flame to low , slowly pour grinded rice and mix it.

5.Now close lid and keep it until rice cooks.

Idly

Ingredients :

Urad Dal - 1 Cup

Idly Rice (Boiled Rice)

- 7 Cups(Mixie)

- 9 Cups(Wet Grinder)

Fenugreek Seeds - 2 tbl spoons

Cooking Soda - 1/2 tbl spoon

Salt - to taste

Oil - 1 tbl spoon

Process :

1. Soak Dal and Bolied rice separately for 4 hours .

2. Wash Urad dal , add some water and freeze it for 1 hour . Take out the dal from freezer , add fenugreek seeds and grind it with the same cold water .

( If urad dal is freezed before grinding we get more batter . So we can add more rice like 7 cups . If you do not freeze dal , then you have to add only 3 cups of rice for 1 cup of Urad dal )

3. Now grind Rice separately and mix it with dal batter along with salt and cooking soda.

4. Now keep the batter outside till the quantity gets almost doubled ( for about 12 hrs approximately )

5. Now add water in cooker and heat it for about 10 minutes . Apply little oil to the Idly plates and keep idly batter and keep in medium for 20mins.

6. Now Idly is ready . This tastes good with coconut chutney or tomato chutney .

Note : This batter can be used for making Dosas also .

Paniyaram


Ingredients :

Idly batter (Idly Batter)

Onions - 2(chopped)

Green chillies - 3(chopped)

Chana Dal - 1 tbl spoon

Urad Dal - 1 tbl spoon

Mustard Seeds - 1 tbl spoon

Curry Leaves - 5

Oil - 2 to 3 tbl spoons

Procedure:


1.Heat oil in Pan and add mustard seeds,chanadal,uraddal, curry leaves.And now add chopped onion,green chillies and fry for 3mins.

2.After frying for a few minutes, mix these with the batter (dough).

3.Place the Paniyaram Vessel on the stove, pour smallamounts of cooking oil. After the oil gets hot, using a large spoon, pour the dough mixture into the holesin such a way and in such quantities that the batteris half filled in each hole .

4.The dough begins to get fried in the oil.


5.After a while, using a little stick which is givenfor paniyaram pan, turn around the paniyarams in theholes so that the uncooked portions also get fried. In a few minutes, hot paniyarams will be ready.



Sweet Pongal


Ingredients:

Rice - 1 tea cup

Milk - 7 tea cups

Grated Jaggery - 2 1/2 to 3 tea cups
(more or less depending on how much sweet you want it)

Cashew Nuts - 2 to 3 tbl spoons

Ghee - 2 tbl spoons

Procedure:

1.Take Pan heat ghee and add cashew nuts and fry it.

2.Wash rice and add milk and pressure cook 3 whistles.

3.After that when it is hot add jaggery and mix it well.

4.Now add cashew nuts and mix it.

5.Have it when it is hot.
